- These are wild caught North Atlantic scallops sourced from a small family business in New England we have partnered with for many years. The scallops come right off the company’s boats and are dry processed and flash frozen within hours.
- ‘Dry’ processing uses no preservatives or artificial methods to preserve the quality of the scallop (as opposed to ‘wet’ harvesting that you find in some supermarkets - the glossy plumpness is from preservatives and carrying additional water weight). Dry scallops are ideal for searing and taste (almost) as good as freshly shucked on the boat.
- Flash freezing uses cold temperatures to maintain freshness, preserve nutrients and protect the product from external impurities.
- We have been sourcing and selling quality protein for over 30-years and are constantly searching for quality suppliers. If there is a source of higher quality North Atlantic scallops processed with both love and skill, we have not found it.
